Famous Cuisines of Bihar

Famous Dishes of Bihar

Litti Chokha
The lip-smacking taste of Litti Chokha needs no
introduction. It is a traditional food of Bihar made
from wheat and sattu with spices. The mixture is
kneaded into round balls and cooked with ghee.
Chokha is prepared by mashing boiled vegetables such
as potatoes, brinjal and tomatoes, along with spices,
onion and garlic. It is traditionally served with Litti.
Sattu or fried gram flour is a distinctive element of
Bihari cuisine. It is also used as a filling in wheat
dough to prepare sattu paratha, also known as Makuni.
Sattu Sarbat
Sattu drink or Sattu ka Namkeen Sharbat is a popular
traditional summer drink originating from Bihar.
Kadhi Bari
Kadhi Bari is a traditional dish from Bihar. It is
generally served with steamed rice rather than roti.
Besan or gram flour is the main ingredient.
The dish is commonly enjoyed with dry vegetables,
pakodas or baris. Pickle and sweet chutney can also
be served as accompaniments.
Khichdi
Special Bihari Khichdi is prepared by mixing rice,
dal and different types of seasonal vegetables.
All ingredients are cooked together to create a
flavorful combination. Ghee is traditionally served

Chana Ghugni
Chana Ghugni is a spicy and tangy evening snack from
Bihar. It is prepared with boiled chickpeas, onion
and spices and is often served with Chuda ka Bhuja,
or flattened rice.
Pittha
Prepared in a local style, Pittha is somewhat similar
to momos but has a distinctive taste. It can be made
either sweet or salty. Pitthas are prepared from rice
flour and fillings such as chana dal paste or poppy
seeds and are generally steamed.
Laddoo (Maner)
Maner, about 30 km west of Patna, is famous for its
traditional laddoo. It is a round-shaped sweet made
from gram flour, sugar and ghee.
Tilkut (Gaya)
Tilkut is a traditional sweet made from pounded sesame
seeds and jaggery or sugar. Gaya is particularly famous
for its Tilkut.
Different varieties include sugar Tilkut, Sakkar Tilkut
and Gur Tilkut. It is especially associated with
Makar Sankranti.
Belgrami (Udwant Nagar)
Belgrami is a traditional sweet preparation of Bihar
made from cheese, sugar and ghee. Udwantnagar,
situated between Arrah and Buxar, is famous for
this sweet.
Kheer Makhana (Darbhanga)
Kheer Makhana is a traditional sweet dish prepared
with milk, sugar and makhana. It is considered a
specialty of the Darbhanga region of north Bihar.
Silao Khaja (Nalanda)
Silao village, located near Biharsharif and Rajgir,
is known for its traditional Khaja. This sweet is
prepared with maida, sugar and ghee and is available
in several varieties.
Dahi-Choora
Dahi-Choora consists of beaten rice served with creamy
curd and sugar or jaggery. It is a popular traditional
breakfast, especially during winter.
Malpua
Malpua is a popular Bihari sweet prepared using
ingredients such as maida, milk, banana, coconut,
dry fruits, sugar and cardamom. It is fried in ghee
and served as a traditional dessert.
Khoye-Ki-Laai (Barh)
Barh, a town in Patna district, is famous for Laai,
a ball-shaped sweet prepared with Ramdana or Amaranth
seeds, Khoya and sugar.
Chandrakala / Pedakiya
Similar to Gujia, Chandrakala is a traditional Bihari
dessert filled with sweetened khoya, coconut,
cardamom and dry fruits. It has a crispy covering
and is dipped in sugar syrup.
Balushahi
Balushahi is a traditional sweet made from flour,
khoya and spices such as cardamom and cinnamon.
The preparation is deep-fried and is known for its
rich taste and texture.
Parwal Ki Mithai
Parwal Ki Mithai is a traditional Bihari sweet made
using pointed gourd. The inner pulp is removed and
the vegetable is boiled, dipped in sugar syrup and
filled with a sweet khoya preparation.
Bhunja
Bhunja is a popular evening snack category in Bihar.
Varieties include Chura ka Bhunja, Makai ke Lawa,
Chana ka Bhunja, peanuts and Masaledar Murhi.
These snacks are traditionally roasted and mixed
with ingredients such as onion, green chilli,
coriander, salt and mustard oil.
Bihari Thali
Bihari Thali is a combination of traditional foods
from Bihar. Its ingredients may change according
